Pressure Canner Gauge Testing:
In order to ensure your pressure canner gauge is working properly it is recommended that a yearly pressure test be done at the start of each canning season. If the dial gauge on your canner does not register correctly you could be jeopardizing the safety of the food you just canned.
If the pressure is lower than what is recommended the internal temperature of the food will not be adequate to kill all the bacteria and spores, this can cause botulism. If the pressure is higher than what is recommended this can cause food to be over processed which will affect the quality of the food you are canning.
